1 cup macadamia nut flour

1/3 cup Zen Enhanced Nutrition Plant-Based Protein

1/2 cup Zen Enhanced Nutrition Collagen

1 tsp cinnamon

1/2 tspz salt

2 tsp baking soda

2 eggs

1/4 cup almond milk

1/2 cup maple syrup

2 tsp vanilla extract

2 ripe bananas, mashed

1/2 cup chopped macadamia nuts




Pre-heat the oven to 180C and prepare a 12-cup muffin tray.

Combine the flours, collagen, spices, salt, and baking powder in a large bowl.

Mix eggs, almond milk, maple syrup, and mashed banana in a medium bowl.

Mix the dry ingredients with the wet until just combined.

Add the chopped macadamia nuts.

Put about two-thirds of the batter into the lined muffin tins.

Put in the oven for 20 minutes, or until a toothpick comes out clean.
