HIGH PROTEIN LOW CARB BANANA PANCAKES

Ingredients

1 Large Very Ripe Banana

1/8 tsp Cinnamon

1/4 tsp Baking Powder

1/4 tsp Salt

2 large Eggs

2 Scoops Zen Enhanced Nutrition Plant-Based Protein

 

Method

On high speed, beat the egg whites for 2 minutes until soft peaks form. In a bowl, combine egg yolks with the remaining ingredients and beat until smooth. Combine 1/3 of the egg whites with the banana mixture. Once the mixture is combined, fold in half of the remaining egg whites followed by the last portion. In a skillet, heat the oil over low heat. Place 1/4 cup of the mixture in the skillet and cook for 60-90 seconds on each side. Prepare and serve right away. Add fresh fruit and plain, Greek yogurt mixed with honey on top. Makes 8.
